Class Description
This hands-on class focuses on two Vietnamese dishes: bò kho, a deeply spiced beef stew, and delicious pork and lemongrass dumplings. You’ll learn how to build bò kho from scratch by layering aromatics and spices, then stewing the beef until succulently tender. You’ll work with rice noodles, make dumpling dough from scratch, and fill it with a fragrant lemongrass pork mixture. To finish, you’ll make vibrant nước chấm, learning how to balance sweetness, acidity, salt, and heat - an essential skill across Vietnamese cooking. This class emphasizes technique and flavor balance, giving you skills you can carry into many dishes beyond this menu.
